Fresh Bok Choy & Radish Kimchi (No Fermentation Needed!)

This bok choy and radish kimchi is fresh, tangy, slightly sweet, and as spicy as you want it to be! It comes together quickly, with simple ingredients, and still manages to feel vibrant, layered, and a little bit special. 

There’s no long fermentation process or complicated steps, which is perfect for a weeknight side dish.

Ingredients 

Here’s everything that comes together to make this bright, flavorful dish:

  • 1 lb bok choy, halved or quartered
  • ½ lb Korean radish or Daikon radish, cubed
  • 3 tbsp soy sauce, tamari, or fish sauce
    (Soy sauce or tamari for a milder flavor, fish sauce for something deeper and more savory)
  • 2 tbsp sugar
  • 2 tbsp plum extract
  • 1 tbsp minced garlic
  • 1 green onion, sliced
  • 2–3 tbsp gochugaru (Korean chili flakes, adjust to taste)
  • 3 tbsp vinegar
  • A dash of sesame seeds
  • A drizzle of sesame oil

How to Make It

Step 1: Prepare Your Vegetables

Start by halving or quartering your bok choy and cubing the radish.

You want pieces that are easy to bite into, but still substantial enough to hold their crunch.

Step 2: Build the Flavor

In a large bowl, combine everything but the vegetables and sesame oil. Mix everything together until it forms a bold, slightly thick dressing.

Step 3: Mix It All Together

Add your bok choy and radish into the bowl.

Toss everything thoroughly, making sure each piece is coated in that rich, vibrant sauce.

Step 4: Finish 

Drizzle a little sesame oil over the top and give it one final mix.

You can enjoy it right away for a fresh, crisp bite, or you can let it sit in the fridge for a couple of hours to allow the flavors to deepen and settle.

  • As a side dish alongside rice and protein
  • On top of noodles or grain bowls
  • Paired with grilled or pan-fried dishes
  • Or straight from the bowl when you want something bold and refreshing
