- 1 medium onion, diced
- 3 carrots, diced
- 3 celery stalks, diced
- 3 garlic cloves, minced (although I personally love using 4-5!)
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika (optional)
- 1 teaspoon dried thyme or oregano
- 1 1/2 cups green or brown lentils, dried, rinsed
- 1 (14.5 oz) can diced tomatoes
- 6 cups vegetable broth (or water with bouillon)
- 2 cups chopped spinach
- Salt and black pepper, to taste
- Juice of 1/2 lemon (to brighten)
- Fresh parsley, for garnish
Instructions:
Build the Base
Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery. Cook for about 7–8 minutes, until they are tender and aromatic. Stir in the garlic, cumin, smoked paprika, and thyme, and cook for a further minute.
Add the Lentils & Simmer
Add the lentils, diced tomatoes, and broth. Mix all together and bring to a boil, then reduce heat to low and simmer, partially covered, 30–35 minutes, or until the lentils are tender.
Add Greens & Brightness
Stir in the spinach and cook another 5 minutes until wilted. Squeeze in the lemon juice, taste, and season with salt and pepper as needed.
Serve & Enjoy
Ladle into bowls, sprinkle with fresh parsley, and serve with crispy bread or a side salad for a complete, satisfying meal.
