But every now and then, it’s fun to shake things up. This miso-glazed version does exactly that! Ingredients
For the Ham
- 1 fully cooked bone-in ham (about 8–10 pounds)
- Whole cloves (optional, but great for aroma and presentation)
For the Miso Glaze
- ¼ cup white miso paste
- ½ cup honey or maple syrup
- 2 tablespoons brown sugar
- 2 tablespoons rice vinegar
- 2 tablespoons soy sauce
- 1 tablespoon Dijon mustard
- 1 tablespoon sesame oil
- 2 garlic cloves, finely minced
- 1 teaspoon grated ginger
- Optional: a pinch of red pepper flakes for a subtle warmth
Instructions
1. Prep the ham
Preheat your oven to 325°F (165°C).
Place the ham flat-side down in a large roasting pan lined with foil for easier cleanup.
If you want that beautiful holiday look, score the surface in a diamond pattern with a sharp knife, then tuck a whole clove into the center of each diamond. Doing this also helps the glaze’s flavor seep deeper into the ham.
2. Make the miso glaze
In a small saucepan, whisk together miso, honey (or maple syrup), brown sugar, rice vinegar, soy sauce, mustard, sesame oil, garlic, and ginger. Warm it over low heat until everything melts together into a silky, shiny glaze.
3. Bake the ham (slow and steady)
Cover the ham loosely with foil and bake for about 1½ to 2 hours, depending on size.
While it bakes, give the glaze a taste: you want a balance of salty, sweet, and deep umami.
4. Glaze in layers
Remove the foil and brush the ham generously with the miso glaze. Return it to the oven and continue baking for 20 minutes.
Repeat this glazing process 2–3 more times, every 15–20 minutes. This slow layering builds that gorgeous lacquered finish and creates sticky edges everyone will fight over.
5. The final caramelized topping
For the last 5 minutes, switch your oven to broil. Let the glaze bubble and caramelize, watching closely so it doesn’t burn. You’re looking for a glossy, amber-brown crust.
6. Rest and serve
Let the ham rest for at least 15 minutes before carving. Serve with the pan drippings spooned over the slices for extra flavor.

- White miso works best because it’s mild and blends beautifully with holiday flavors.
- For a citrus twist, add a tablespoon of orange zest to the glaze.
